Why does chimichingas remind me of "Meet The Parents"? i've never tried these before, but they look so good! I'm not a big fan of beans either…your recipe is perfect!

Looks great! I've made chimichangas using a panini weight & a hot skillet, but I also like your idea of baking them. Much better than the fried version!
