Classic Buttermilk Pancakes

I can’t believe I haven’t shared this pancake recipe before now! We absolutely love pancakes in this house and these classic buttermilk pancakes are our favorite. These are the pancakes I grew up eating. My mom has made this exact recipe for as long as I can remember and in my mind, these are just what pancakes should taste like. I’ve often done the milk/vinegar substitution for the buttermilk, and they taste great, but real buttermilk will make them extra fluffy. I have to admit that Mike actually loves Bisquick pancakes, but I’m happy to report that these buttermilk pancakes beat out Bisquick every time 🙂

Classic Buttermilk Pancakes

Ingredients:

1 egg
1 cup buttermilk
2 Tbsp canola oil
1 cup all-purpose flour
1 Tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Directions:

Beat the egg in a medium sized bowl. Add remaining ingredients in the order listed and beat until smooth. Grease your griddle and heat on medium high heat. To test the griddle, sprinkle with a few drops of water. If bubble skitter around, the heat is right. Pour batter onto the hot griddle. Flip the pancakes as soon as they are puffed and full of bubbles. Cook until both sides are golden brown. You may have to adjust the heat on the second batch to keep them from burning.
