Apple Cinnamon Pancakes

I love Fall. The cool mornings, the changing leaves, the feeling of a fresh start, and of course the return of fall baking.Β  I love baking with apples and pumpkin and finding new recipes that taste like Fall should taste.

These apple cinnamon pancakes fit that description perfectly. They’re full of fresh diced apples, lots of cinnamon and just the right amount of sugar. They look like traditional pancakes from the outside, but when you bite into them you get the taste of fresh baked cinnamon apples. Yum. πŸ™‚

I made these for breakfast on my day off last week and Mike and I both loved them!Β  As Mike was leaving for work he turned back to me and said: “Could you make me breakfast every day?” Ha, not likely, but at least I know these were a hit. πŸ™‚

Apple Cinnamon Pancakes

Apple Cinnamon Pancakes

Yield: Makes 14-18 small pancakes

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

These apple cinnamon pancakes are light and fluffy and chock full of apples and cinnamon!

Ingredients:

  • 1 1/4 cup all purpose flour
  • 2 Tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup milk
  • 1/2 cup applesauce
  • 1 apple, peeled and chopped
  • 1 egg
  • 2 Tablespoons vegetable oil or melted butter

Directions:

Whisk together flour, salt, cinnamon, sugar and baking powder in a medium sized bowl. In a separate bowl, whisk together milk, egg, applesauce and vegetable oil or melted butter. Pour the wet ingredients into the dry ingredients and whisk until just combined. Stir in the chopped apples. Don’t worry if it's still a little lumpy.

Let the batter sit for 10 minutes while you heat the skillet. Over low-medium heat melt a tablespoon of butter. Once the skillet is hot, add about 1/3 cup scoop of batter to the pan. Let cook until bubbles begin to form on the top surface and bottom is lightly browned. Carefully flip with a spatula and cook the second side until golden brown, a couple minutes more.

  9. I made these last night! They were really good– I added a little vanilla extract and some extra cinnamon. Next time I may cook the apples a little to take some crunch out, but these were great as is. Definitely perfect fall pancake πŸ™‚

  19. I have the perfect syrup for your apple cinnamon pancakes.. It’s yummy over pumpkin pancakes too! You’ll love it if you like apples!
    Apple Cider Syrup
    3/4 Cup sugar
    1/4 cup brown sugar
    2 TBs cornstarch
    1/2 tsp ground cinnamon
    1/4 tsp ground nutmeg
    2 cups fresh apple cider or apple juice
    1 Tbs fresh lemon juice
    1/2 tsp vanilla
    1/4 cup butter
    Mix sugars, cornstarch, cinnamon and nutmeg well. Add apple cider and lemon juice. Bring to a boil and continue boiling for 1 minute, stirring constantly. Remove from heat and stir in butter. Store leftovers in the refrigerator, use within a week or two.

  35. Tried these this morning, they were great! Not too heavy, although I think I had my heat turned up a bit too high since they were a little more moist than a pancake usually is (which might be because of the applesauce).

    I peeled, chopped and then microwaved the apples for 45 seconds just to get them a little more soft and ready. Put the pancakes on a rack to cool as well.
    Nice cheap,easy recipe for a college student like me!

  38. Just made these and they are awesome! I thought the batter looked a little thick after the first one was in the skillet so I added more milk to the rest of the batter. Well the first one (which was according to your recipe exactly) came out perfect…I should have just trusted you!

  48. These were very good. I made 11 pancakes. The only change I made was to substitute 1/4 C. wheat germ for 1/4 C. flour. They still turned out quite fluffy. Thanks for the great recipe. It was pretty easy to make too.
