Baked Oatmeal
I used to think I didn’t like baked oatmeal. I am very particular about the way I eat my oatmeal, and somehow the baked version just didn’t taste quite right. Then I read a wonderful book on hospitality (this one, if anyone’s interested!) and the author convinced me to try the baked oatmeal recipe she included. Needless to say, I loved it. It has just the right texture – cake-like and not at all mushy, and the wonderful flavor of brown sugar and cinnamon. I also love all the ideas for mix-ins she included. We’ve only tried fruit so far (blueberries are Mike’s favorite and chopped apples are mine), but I’m pretty sure we’ll continue to experiment. This isn’t exactly a healthy breakfast (I’m experimenting with cutting down the sugar as well), but it’s a nice change from cereal or toast. It tastes great re-heated as well, which makes it convenient for busy mornings. 🙂
Baked Oatmeal
Yield: Serves 8
Ingredients:
- 3 cups old fashioned oats (not quick oats)
- 1/2 cup melted butter
- 1 cup brown sugar
- 1 1/2 tsp cinnamon
- 1 1/2 cups buttermilk
- 2 eggs, beaten
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 - 1 cup optional add-ins: chopped apples, raisins, nuts, chopped peaches, chopped bananas, etc.
Directions:
- The night before, combine the oats, butter, brown sugar, cinnamon and buttermilk in a large bowl. Cover and refrigerate until morning.
- In the morning, let the mixture stand at room temperature for 5 minutes, then add the eggs, baking powder, salt and whatever add-ins you choose. Stir well.
- Pour into a greased 9x9 pan. Bake at 350 for 40-45 minutes.
- Cut into squares and serve with milk.
Mmmm. I’ve always wanted to try baked oatmeal. Here we go! I’ve put it off for too long!
I didn’t think I’d like baked oatmeal but your post is very inviting. Plus, I have an unopened carton of buttermilk to use up in the next 3 days and this recipe would be perfect. I’ll let you know how it goes!

I am a big fan of baked oatmeal – eat is almost every day. I bake them in a muffin tin, (which makes them portable) and usually have two for breakfast with some greek yogurt or cottage cheese. The recipe I use calls for unsweetened applesauce, but I sometimes substitute canned pumpkin, add the usual pumpkin pie spices. I am definitely, definitely, definitely going to try your version too!!! 🙂

This looks delish! And I love Donna’s idea of baking them in a muffin tin to make them portable. Any idea if one could use steel cut oats instead of old fashioned? The hubby’s been on steel cut oat tear lately.
I’m guessing steel cut wouldn’t work out unless you drastically altered the recipe. I think they require a different amount of liquid and a longer cooking time. I’ve heard you can make steel cut oats in the crockpot though – I’ve been meaning to try that!
love the idea of buttermilk… we eat baked oatmeal here at least once a week! We use applesauce in place of the butter – saves calories but not taste.
I highly recommend apple cranberry, or cherry vanilla baked oatmeal… oh, and sweet potato is excellent too!

I made this for my husband and I the other morning and he loved it! My add-ins were peaches, blueberries, bananas, walnuts, apples and cranberries and it was awesome! It was yum! But instead of a 9×9 square pan I used my red round pie pan (it looked prettier) and it still turned out great. Thanks again for another great recipe!

Hi Megan! This is my first time visiting your website. I was looking for a healthy baked oatmeal recipe and found your website. I was wondering, why do you combine some of the ingredients together and let them sit in the fridge overnight? Is it just a morning convenience thing? Something I can skip? I will replace the butter with unsweetened applesauce, add chopped walnuts, and then experiment with how much added sugar I can go without. I realize that 0 added sugar would probably make it unbearable lol. Also, I make homemade almond milk and then dry out the pulp to make almond meal. Wondering if I can add this in, and if so, should I put it in the overnight mixture or not? Thanks!
My guess is, you combine them overnight to soften the oats, but I’m not positive. I’m pretty sure you can add in whatever you want, although too much almond meal would probably change the texture. I have never used it before so I’m not sure when you should add it in. I’d probably add it in the morning and if that doesn’t work, try it the night before 🙂 Hope that helps!
This looks soo good! I had no idea you could bake oatmeal. I’ve got some frozen berries to add in and the right oatmeal. I’ve been making steel cut oats in my crockpot overnight and love it. It’s so easy. I’m going to try your recipe for.baked oatmeal
Try adding the zest of one orange to a dried cranberry and walnut add in. Over the top!
For a long time my sister tried to get me. To try bakes oatmeal, no way. Then one day she made it when I was at her house for the weekend. Reluctantly, I tried it and loved it. So I found this recipe and because I love Buttermilk, I loved the recipe. I usually make it the same day and my add-ins vary depending on what I’m feeling. Honestly though, walnuts, peanut butter, coconut … yum!
