Zucchini Pizza Bites
I am so excited to share these zucchini pizza bites with you! I’ve been meaning to try these for ages, but just got around to it last week. Since then, I’ve had these delicious little bites for lunch more often than I’d like to admit. I love pizza, and this recipe is easy and guilt-free! I’ve been making a big batch of my favorite quick and easy pizza sauce and using it for these zucchini pizza bites whenever I have fresh zucchini in the house. Mike was actually pretty convinced he wouldn’t like these, and I was excited to have them all to myself. Of course I then made the mistake of letting him try a few. Needless to say, he loved them, and now I am forced to share. Oh well, at least we’re both eating more vegetables! 🙂 Hope you like these as much as we do!
Zucchini Pizza Bites
Ingredients:
- 1 medium zucchini, cut on the diagonal into 1/4 inch slices
- olive oil
- salt and pepper
- 2 tbsp pizza sauce
- 1/4 cup shredded mozzarella cheese
Directions:
- Brush both sides of the zucchini slices very lightly with olive oil and season with salt and pepper.
- Broil the zucchini for 1-2 minutes on each side.
- Top with sauce and cheese and broil for 2 minutes, or until cheese is melted and starting to brown.
- Serve immediately.

I just made these, and they. are. phenomenal.
Seriously.
I just filled a pan for the family, using several zucchinis… And I also added tiny cut up pepperoni to each slice.
But it was delicious.
I just ate literally an entire zucchini by myself. What?
I mean, I like veggies, but a whole zucchini?
I love pizza, and this was an awesome low-carb, QUICK and easy option for dinner!
