Candy Corn Popcorn Balls
How fun are these candy corn popcorn balls? I don’t normally make Halloween specific treats, but when I saw this recipe in the most recent Food Network Magazine, I knew I had to try it. If nothing else, it served as a good excuse to buy a bag of candy corn. π These popcorn balls ended up being pretty easy to make and they tasted great. Β They are sweet and sticky, and the little pieces of candy corn throughout were my favorite part. I love that the addition of peanuts and candy corn makes these just a little different from traditional popcorn balls, and I can just picture these being served at a Halloween party. I plan on making these again to snack on while handing out candy to the neighbor kids. Β π
Candy Corn Popcorn Balls
Yield: Makes 12 popcorn balls
Ingredients:
- 6 tablespoons popcorn kernels
- 1/4 cup peanut oil
- 1/2 cup sugar
- Cooking spray
- 1 cup candy corn
- 1/2 cup salted roasted peanuts
- 4 cups mini marshmallows
- 4 tablespoons unsalted butter
Directions:
- Heat a large pot over medium-high heat. Add the popcorn kernels and peanut oil. When the oil starts to sizzle, sprinkle the sugar over the kernels. Cover with a tight-fitting lid and shake the pot until the popping slows down, about 8 minutes. Remove from the heat and set aside to cool. Spray a large bowl with cooking spray and add the popcorn, candy corn and peanuts.
- Combine the marshmallows and butter in a large pot over medium-high heat. Cook, stirring, until melted and smooth, about 5 minutes.
- Pour the melted marshmallow mixture over the popcorn mixture and gently toss to coat. Coat your hands with cooking spray, then shape the popcorn into 3-inch balls. Let cool.
