Pizza Bites
Another delicious recipe for that pizza dough I’ve been raving about. I got this recipe from Annies Eats (the same place I got the pizza crust – that girl knows her pizza!), and we loved it. Mike loves any sort of stromboli/pepperoni roll, so this recipe was a pretty sure thing. They’re like little mini pizzas, you can’t go wrong with that! These would be perfect for any sort of get together – they taste fantastic and who doesn’t like bite sized foods? They’re fairly simple to make as well. Wrap up some cheese and pepperoni inside pieces of pizza dough, bake, and serve! We were in a rush to eat these the night I made them, so I didn’t leave them in quite as long as I should have, which is why they’re not very brown on top. It didn’t affect their taste though – these were happily devoured. And they might be my new favorite party food.
Pizza Bites
Ingredients:
½ batch pizza dough (enough for 1 pizza)
4 oz. mozzarella cheese, cubed (about 20-24 pieces)
Sliced pepperoni
Olive oil
Italian seasoning
Grated Parmesan cheese
Directions:
Preheat the oven to 400˚ F. Lightly grease a 9-inch pie plate. Divide the pizza dough into approximately 24 equal pieces. Take one of the dough pieces and wrap it around a cube of cheese and a slice or two of pepperoni. Pull the edges of the dough around the filling and pinch closed. Place seam-side down in the baking dish. Repeat with the remaining dough pieces.
Lightly brush the tops of the dough balls with olive oil. Sprinkle with Italian seasoning and grated Parmesan cheese. Bake for 20 minutes, or until the tops are golden brown. Serve warm, with pizza sauce for dipping.

Paul is going to LOVE these! Can't wait to make them for him:) Thank you, Megan!
Oh I love this idea! They look great!
Oh yum Megan! My favourite food in bite size form. These look great! As to my buttermilk cake (I thought I'd answer you here in case you didn't get back to my site for the answer, lol), I plopped the sifter down on a piece of wax paper and then measured my ingredients and then put them into the sifter. So yes, flour was measured before). I hope you enjoy it!!
Wow, those look amazing! I definitely have to try these, and maybe add some olives instead of pepperoni. Have you tried it with other fillings? I've had such a bad experience with using veggies as dough… (They get mushy, dough gets mushy and uncooked)
I've seen this recipe before and always said I was going to try it. They look fantastic!!
Oh my gosh, this is brilliant!
I will definitely be trying these!
I've got to try these on my grandkids.
Megan…these little bites are so similar and at the same time so different of my little buns…they look so yummie and very very tasty 🙂
Would love to have it as snacks.
I just made these tonight, and we LOVED them! We love homemade pizza for dinner, and this is a perfect recipe for a little variety. Good work! Keep these great recipes coming! 🙂
I've been looking at these too — now I have extra motivation to try them 🙂 Maybe for girl's night!
Brenda – thanks for the answer on the buttermilk cake – can't wait to try it!
TJ – I haven't tried other fillings (yet!), but I've used veggies in pepperoni rolls and strombolis and they've been fine so I'm guessing it would work here as well. These little bites are so small, however, that you wouldn't be able to fit too much inside.
andrea – I'm so glad you liked them! Thanks so much for stopping back to let me know 🙂
SnoWhite – these would be a great girls night treat!
